What are porcini?
Directions:
1. Soaked porcini in 1 cup of water to soften,Chop and reserve mushroom soaking liquid. 2. Melt butter in a large saucepan over medium heat add the chopped onions and cook till translucent, about 5 minutes. 3. Add sliced mushrooms, porcini, stock and socking liquid being careful not to add any sand in the button of the container. Reserve half the mushrooms for garnish. Bring stock to a boil. 4. Stir together the 1 cup or water and cornmeal. Gradually stir into boiling stock, reduce the heat to low and cook, stirring constantly with a wooden spoon, until the cornmeal is very thick and leaves the sides of the pan. Stir in Parmesan cheese, salt and pepper.Top with reserved mushrooms
