How to section citrus?
Directions:
1. Make the vinaigrette from the first ten ingredients the ginger through the vegetable oil. First mix everything excluding the oil then slowly whisk in the oil. Reserve half of the vinaigrette for the salad dressing. 2. Marinate the Mako shark steaks with the remaining vinaigrette for no more than 1/2 hour. 3. Make the salad from the remaining ingredients, the orange sections to the basil. Dress the salad with the remaining vinaigrette just before serving. 4. Heat a grill or broiler to high, when the grill is very hot, remove the fish from the marinade and cook to desired doneness, I prefer medium for Mako shark.Discard marinade. 5. Serve the fish topped with the salad, accompanied by the orzo pilaf.
