Saltimbocca with Shrimp

Directions:
1. Top each veal scallop with a slice of prosciutto and a sage leaf secure with a toothpick. 2. In a large fry pan sauté the shrimp in 2 tbsp. of butter, season to taste with salt and pepper remove from pan and reserve. 3. Dust the veal with flour and shake off the excess. Add 4 more tbsp. of butter to the same pan and cook the veal over medium heat until browned on both sides, about 2 minutes per side season with salt and pepper. 4. Add white wine to the pan and bring to a simmer reduce by half. 5. Top each scallop with a cooked reserved shrimp and a slice of mozzarella cheese, place a lid on the pan and cook until the cheese is melted. 6. Remove the shrimp and cheese topped veal from the pan and place on serving plates.Add the remaining butter to the pan and stir to make the sauce. Pour the sauce over the veal and serve.
