Southwestern red pepper coulis

Directions:
1. Follow the instructions for roasting the peppers, peel, seed, and chop coarsely. Set aside. 2. Heat olive oil in a saucepan. Add the garlic and brown slightly, add onions and cook till translucent. 3. Add the cumin and chili powder stir till fragrant over low heat be careful not to burn. Deglaze with vinegar and white wine. 4. Add the red bell peppers and the stock or water. Cook until half of the liquid is evaporated. 5. Remove the solid part of the sauce from the liquid and place into a food processor, reserve liquid. Purée the solids until very smooth. Pass through a fine strainer . 6. Add butter and adjust seasoning with the cayenne, sugar, salt and pepper. Add the cilantro. Notes: Refer to how to roast peppers recipe at www.chefben.com
